Eye round is a slice of lean meat that is cut from the end of a cattle, just above the shank or back leg. As this muscle does plenty of work, it is full of flavor, however, somewhat less tender. You can cook this versatile cut as a whole, portioned for steaks, or cubed for stew. Our experts recommend marinating and slow roasting or braising techniques to tenderize the meat.
